Somebody told me it means "poop happens". But I think that is "oxen excrement"... Do you know? Thanks.

I think that he or she meant to say "excrementum occurrit," which is one of those little Latin phrases made up by moderns. I personally like it more than "excrementum fit," because while "e. fit" kind of has the sense of "sh-it comes into being," "e. occurrit" has the sense of "sh-it runs up and hits you in the face." Both can mean "sh-it happens," but I think the latter expresses it a bit better.

"ocurum" means nothing in Latin.
"occurrunt" would translate "they happens" but I can't figure what's the meaning of "poop happens" or "happens poop"
Following yr suggestion "oxen excrement" translates into Latin as "excrementum boum".
I have any guess for a correct word instead of "ocurum" that could fit the context.

It's not really Latin, but one of the things that are made up to be funny, by people who don't have a clue, like "bastardos non carborundum". In proper Latin it would be "excrementum fit" = s.hit happens

Edit:
Ithyphallos (sorry but the name makes you sound like a right prick ;-)) my translation is exactly how I interpret the English saying. That something happens means exactly NOT that it jumps at you or hits you in the face.
