heavyweight 205 - 265 lbs
light heavyweight 185-205 lbs
middleweight 170-185 lbs
welterweight 155-170 lbs
lightweight 145-155 lbs

There are currently 5 weights in the UFC.

Lightweight, over 145-155
Titleholder: Sean Sherk

Welterweight, over 155-170
Titleholder: Matt Serra

Middleweight, over 170-185
Titleholder: Anderson Silva

Light Heavyweight, over 185-205
Titleholder: Chuck Lidell

Heavyweight, over 205-265
Titleholder: Randy Couture

There are rumors around that they will be adding a Super Lightweight division (under 145), but nothing confirmed that I know of.
