Saimin (Noodle Soup)
(pronounced "SI-mean" or "SI-min")
Skinny-thin egg noodles in a warm broth with vegetables
On the Aloha Restaurant web site they show their menu with Spam Saimin (soup) as one of their choices. You could use any ‘Chinese-Style’ soup recipe and add Spam. I’m sure there are several ways to make it, but here is one recipe. --
SPAM Saimin
Ingredients:
Ready to eat saimin/instant saimin
SPAM (fried or out of the can) sliced into desired sized strips
Chopped green onion, kamaboko (Japanese Fish Cake) sliced into strips, Fried egg sliced into strips
Flavorings such as goma (sesame) oil, chili oil, tabasco, shoyu (soy sauce), mirin, etc
Prepare saimin as indicated
While preparing saimin, fry SPAM if you want to, otherwise out of the can is fine, and slice into desired sized strips
Also prepare other desired ingredients for the saimin, such as chopped green onion, kamaboko slices, goma oil or other flavorings, etc
Add all ingredients to prepared saimin. If desired, add hot sauce or other last minute "touches", eat hot and enjoy.

1 cn SPAM Luncheon Meat (12 oz)
1 pk Cream cheese, softened (8oz)
1/3 c Chopped green onion
2 tb Chopped fresh dill
3 Flour tortillas (8")
1 md Cucumber, peeled and thinly
-sliced
1/4 c Sunflower seeds
1/2 c Alfalfa sprouts
In bowl, combine SPAM and cream cheese. Stir in green onion and dill. Spread 1/3 of SPAM mixture evenly over each tortilla. Top with 1/3 each cucumber, sunflower seeds, and alfalfa sprouts. Roll up tortilla jelly roll fashion and wrap in plastic wrap. Repeat with remaining tortillas. Refrigerate 2 hours. to serve, cut each roll in half.

It's called Saimin. I found a recipe online...just replace the chicken with SPAM...

Ingredients
You can prep the first 3 steps of the dish hours ahead. The final cooking will only take a couple of minutes.
8 ounces dried Chinese egg noodles
1 tablespoon roasted sesame oil
1 to 2 cups broccoli flowerets
4 cups lower-sodium chicken broth
3 slices fresh ginger
8 ounces extra-firm tofu, well-drained and patted dry
2 tablespoons vegetable cooking oil, divided
2 large eggs, lightly beaten and seasoned with salt and pepper
1 teaspoon soy sauce
1/4 teaspoon salt
Pepper
1/4 pound fresh snow peas, stringed
1 1/2 cups sliced bok choy or Napa cabbage
6 ounces cooked chicken or pork, chopped or shredded
1 cup fresh bean sprouts
2 green onions, thinly sliced on the bias
Roasted sesame oil
Instructions
1. Cook noodles following package directions. Drain well, rinse in cold water, and combine with sesame oil in a large bowl.
2. Cook broccoli in 2 to 3 cups boiling water 2 to 3 minutes or until crisp-tender. Drain and rinse in cold water. Drain again and set aside.
3. Heat broth and ginger in a large saucepan over low heat about 30 minutes; do not allow it to boil. Remove ginger.
4. Cut tofu into 1/2-inch-thick squares and blot well with paper towels. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. When hot, add tofu and cook on both sides 5 to 6 minutes or until golden brown. Set aside on paper towels. Add remaining 1 tablespoon vegetable oil to pan; when hot, add egg and rotate pan to film the bottom with a thin layer of egg. When egg has set on the bottom, carefully flip it over. Slide egg crepe onto a plate and cool. Roll up to form a tight cylinder and cut crosswise into thin strips.
5. When ready to serve, season broth with soy sauce, salt and pepper. Bring to a boil over medium-high heat; add snow peas and cabbage. Cook 1 minute. Add noodles, broccoli, pork or chicken, tofu, egg strips and bean sprouts; cook 30 seconds longer. Divide into bowls, scatter green onions on top and drizzle with seame oil. Serve immediately. Serves 4.

Other Saimin Ideas
Noodles. The best mainland noodle choices are fresh chow mein noodles (refrigerated) or dried ramen noodles, available in grocery stores in the soup section. Organic dried udon or soba (Hakubaku brand), made without egg, come in packages of three 3.1-ounce bundles. You can also use spaghettini or thin Chinese egg noodles (Rose Brand), also available dried in many supermarkets. Yakisoba, pre-cooked noodles, are often stocked on refrigerated produce shelves. A 7.7-ounce package, enough for 2 to 3 servings, is a common size.
Vegetable suggestions. Spinach, chard, asparagus, snow peas, bean sprouts, zucchini slices or cubes, small broccoli florets, Chinese cabbage (Napa or bok choy), green beans, dried or fresh shiitake mushrooms, green onion, carrots, pea shoots, bell pepper, or strips of hot chili.
Meat suggestions. Chinese (or other) barbecued pork or chicken, thin-sliced raw beef tenderloin (add to hot soup at last minute), roast chicken strips, Spam strips.
Fish and seafood suggestions. Chinese fish cake slices, cooked shelled shrimp, small chunks of fresh salmon, bay or sea scallops.
Tofu: Cubes of fresh or baked tofu, or cubes of fried.
Flavoring suggestions. Fresh ginger, lemon grass, garlic, chili paste with garlic, black bean paste, soy sauce, fish sauce, splash of Chinese vinegar, dash of dry sherry, chili oil, dash of roasted sesame oil.
Garnish ideas. Sliced hard-cooked egg or egg crepe rolled up and sliced chiffonade.
Herbs. Fresh cilantro or fresh basil leaves sprinkled on at end.
