What happened is that the Arabs under the leadership of Aman PASHA refused this deal and declared war on the Jews with the hopes of wiping them off the face of the map. After 6 wars and 2 intifada's they have learned that they cannot win this way so they want to get as much land away from Israel politically so that they then will have a greater chance in defeating the Jews and removing them off the face of the map.

Several wars happened.
Israel was attacked the moment it was created (almost literally), and for the most part, they never gave back the land that they conquered in their counterattacks (with the obvious exception of the Sinai peninsula) -- preferring to keep this land as a buffer zone.

If I remember my history correctly (and I think I do), some of the Mideast countries invaded Israel. When they lost, Israel annexed some of their territory.
