I have a bag of kidney beans that I picked up off of my daughters WIC check and I decided that I want to make some chili tomrrow for dinner. Does anyone have a basic chili recipe that I could use? I cannot use cumin due to hubbys allergys. Thanks!

I said daughters WIC, because she gets WIC and I happened to pick beans instead of peanut butter and I need to use them up. Whats wrong with that?

I didn't ask to be lectured over a bag of beans and where the beans came from. I happen to use the beans for her, just wanted to make it in chili from it.

Basic Spicy Chili:

45 min 15 min prep
6 servings

1 1/4 lbs ground beef
3 medium onions, chopped
1 (46 ounce) can tomato juice
1 (28 ounce) can whole tomatoes
3 cups kidney beans, drained and rinsed
4 tablespoons chili powder (or to taste)
1/4 teaspoon Dave's Insanity hot sauce (or your favorite intense hot sauce--optional)
1/8 teaspoon baking soda (a pinch)
1 cup water (if needed)

1. In a large skillet, saute beef and onions together until beef is browned.
2. Drain beef and add to a large soup pot (this step can be skipped if you wish to brown the beef in the soup pot).
3. Add tomato juice and simmer over medium heat.
4. Add tomatoes (with their juice), crushing between fingers to break apart.
5. Add kidney beans, chili powder (the entire 4 tablespoons may be a bit much for some people, so start out small and add to taste), and optional hot sauce.
6. After mixture comes to a simmer, add baking soda (the baking soda will help cut down the acidity of the tomatoes).
7. Simmer for about 20-30 minutes, adding water if necessary to thin out the chili.
8. Taste for seasoning.

Brown off some mince (enough to feed your family - don't know how big your family is) with an onion and garlic. Add a tin of chopped tomatoes, tomato puree and the kidney beans. Mix all that up and then throw in some chili powder, salt and lots of black ground pepper. I also like to add some yellow peppers because it makes it look pretty when it's on your plate! Leave all that to simmer in a pot on the stove whilst you sort out some rice, baked potatoes or fresh baguettes. Enjoy!!

1 lb ground beef
1 pack McCormick's chili mix (any will work) Check for cumin! Sub Chili powder.
1 small onion chopped
1 can tomato paste
water?
brown beef in a skillet and drain. Add the Mix, onion and paste. If it dry add some water.
Normally I not drain the fat and not use water.
If you not have the mix, then use a little chili powder.
You can add the beans anytime.
If, you have Frito's or Crackers. Crush slightly add to a bowl and cover with chili and cheese if you have cheese.

i make my chili with 3 packets of chili seasoning, 2lbs of hamburger, kidney beans, an onion, 2 cups of tomato juice and a 1/2 can of beer, pinch of chili powder, a little cheyanne pepper powder, and some garlic powder i cook the hamburger and the onion, and but everything in a slow cooker and let it sit all day and cook on low heat, the longer you cook it the more flavor it has, i like my chili a little on the spicy side and i keep it thick, i dont like it looking like soup, the longer you cook it the thicker it gets, even better the next day reheated

Uh, why did you feel it necessary to say you got the beans off your daughter's WIC check? Why? Man, that strikes me as odd! Yikes!

My basic chili starts with tomato juice, to that I add a crap load of seasonings such as garlic powder, onion powder, red pepper flakes and chili powder. I use a mix of hamburger and sausage for the meat and I don't put beans in mine since the kids and I like it soupy. My husband adds beans to his bowl. WE like to dip peanut butter and jelly sandwiches in ours.

ADDITIONAL
Well, it was unnecessary to tell us your daughter is on WIC. Does she work? I don't know, I just wouldn't go around telling people my daughters on WIC, kinda embarrassing.

So your daughter's not on WIC, you are. So I see, sorry, you're using WIC while you put yourself through school or to make ends meet in addition to the check you get from your job. Sorry.

While there is absolutely nothing wrong with needing assistance when times get tough. I'm glad you daughter is getting the help she needs. I'm sure it's not up to you to let the world know of her very personal situation. You're her mother, nurture and protect, that's your job. You took food away from your daughter when she obviously needs all she can get. So to answer your 2nd question...that's what's wrong with that. Go get your own beans and maybe I'll give you my recipe.
