So if you're sick during or after the operation then there will be no solids to choke you.
They stick a tube down your throat to help you breathe and there will be people there to monitor and look after you all the way through, even when you're finished and in the recovery room, and you will be checked upon for several hours afterwards.
You will wake up with a sore throat but they'll have a glass of water waiting for you and it won't last long.
If you're having surgery and it's your first time, don't be afraid at all... be calm, be cool, there's nothing to worry about.
Your nurse will put a needle plug thing in your hand before your op, maybe an hour or so before. That's the last discomfort you'll feel while you're still awake.
Then you'll be wheeled into the anaesthesia room where the knock-out fluids will go into the plug already fitted to a vein on your hand and you'll enjoy a massive full-body rush before sweet sleep then, instantaneously as if nothing happened, you'll be awake again and then you'll be watered and fed awhile later to bring your body into full wakefulness.

Believe it or not, any parent you have around will cause you more anxiety than if you were there alone or with a friend, so unless you're really young i'd advise you to leave the company of your parent(s) fairly early on, otherwise parting from them just before going into surgery makes it seem like a major deal, when it's not.

During the surgery you will be put under and have either breathing tubes put in, or put on oxygen. Some people react to the drugs used by throwing-up. Not a good thing anytime, but could be life threatening when in either of the above conditions. If there is nothing in your stomach, there is nothing to cause harm to your respiration. Besides the Doctor doesn't want you puking all over him/her or the OR.

Usually it is 12 am. You need any kind of anesthesia, there should be no food in your system the problem is if your breathing is control by some one your body is actually also in a death stage all food in your system will work its way up out of your stomach, you can aspirator on the food and you can die. Partly because the anesthesia can make you vomit and possibly choke, but also because the food that isn't finished digesting can come up and get into the lungs as your body and organs are moved around. If little bits of food get into your lungs (aspiration,) they can cause choking, drowning or infection. In fact, some forms of pneumonia are caused by tiny bits of food getting into the lungs and causing bacteria.

Usually you want to not eat even earlier than that, and the reason is that stuff that high in your digestive system can often be barfed up during anesthesia so you can choke and even die.

To ensure your safety while under anesthesia, You don't want to risk asperation(food going down your wind pipe) while you are under anesthesia. One of the effects of anesthesia is that normal airway reflexes that close the airway from the esophagus ( throat) to the Trachea( wind pipe) are suppressed so that they no longer function properly.

Anesthesia is very hard on your system and can cause nausea. They don't want anything in your stomach that you could vomit up or choke on while under anesthesia.

In case you throw up from the meds while you're "out" you can choke on your own vomit and die. So, it's better not to eat anything.
