Beef is the generic term for meat from cows - they can be female or male cows of any age. Steak refers to a cut - it can be a cut of beef or a cut of some other type of meat such as lamb or pork. Red meats are beef, bison, lamb, goat. But the packaging will tell you what type of animal it was!
Horse is commonly eaten outside of the US. It is illegal to eat it in many states (maybe all?) inside the US although I don't understand that logic. If your parents or grandparents lived in the US during WWII they probably ate horse because most of the beef went to feed the soldiers at war. Its only in the last 20 years that sentiment has turned it into a taboo meat.
BTW - I AM a horse lover and would NEVER eat it. But I don't look down on others for their customs or tastes.

Most of the red meat comes from cattle beasts, the males, as the cows are usually used in the Dairy industry, here anyway.

The red meat is from cows, never horses. Sometimes sheep, or goats too, but never horses.

Horse, yes. Cow, no. I highly doubt the horse would eat meat, I know my horses hate the smell of meat.

Cows mostly. If they were going to sell horse meat, assuming it was legal where you live, it would have to be labeled as such.
