I don't have this problem. My husband, myself, and my kids love kapusta (polish kraut) It's not as strong as what you get in the can straight-more like a pickled relish pungent flavor. To make polish style; I use a half head of shredded cabbage boiled with a can of kraut. I add raw bacon to cook IN the boil and S&P along with caraway seed (little bit). I serve the kielbsa (like a garlic smoked sausage) over it with a side of fried potatoe and cheeze perogiw/ sour cream (yeah, I could make them from scratch, but I buy frozen to save about 8 hours of work!)
A bite size piece of keilbasa, a little kapusta (kraut) and a bite size slice of perogi, fills the fork for a perfect bite.

This is an excellent question! I never know what to do with it either, I think the makers should put it in smaller cans LOL. Here are several things you can do with the leftovers:

I love to make sauerkraut, pierogies (Mrs. T) brand and polish sausage... Hillshire Farms... Boil/dran pierogies, in a large skillet cut up sausage it's pre-cooked so just to heat through, add pierogies and sauerkraut... You can add a little butter to brown.... Delicious !!!

My mother roasts a pork loin on saurkraut that comes out really tender and moist. Or you could make ruebens the next day.

If you love saurkraut, next time you make mashed potatoes, put some into the mix (or if you don't like the texture it creates . . . i.e. stringy. . . drain the juice into it ) and mash as usual. It's great!

You can mix it with cabbage or use it on top of a Reuben sandwich. You can mix it with smoked sausage.
