Sure, but they will dry out.... However, you don't have to dump oil on them to taste good. I just roasted some potatoes today. I cut about 8 medium potatoes into wedges and used about 2-3 tablespoons of olive oil to roast them.. I also sprinkled them with 1/2 packet of good seasons garlic/herb dry dressing mix and baked them on 475 degrees for about 45min.... Just use enough oil to coat not soak the potatoes...

You can, but the skin will become leathery. You don't need a lot of oil, so if you want to cut down on calories use one that has the tick from the Heart Foundation.
If you add oil to the pan first and get it almost to the point of smoking and then add the wedges they will absorb less oil.

i have..theres no harm not using oil. you could drizzle alittle of your favorite sauce or something. i made roasted potatoe wedges adding alittle yoshida sweet and sour sauce. it tastes pretty good

Use an non-stick cooking spray or get an olive oil spritzer if you are worried about calories.
