apples in the bag maintain the moisture. Some people will have apple peals in their tobacco tin to keep it fresh

Eat them faster and don't buy so many.
You can still eat them after they have rooted, you just have to peel them first.
When I get potatoes I take them out of the bag, put them into a plastic basin that has a couple paper towels on the bottom and then cover them with an old dish towel. I sort out the ones that have a cut or bad spot and use them first so they don't rot.
You don't want the light to get to them and if the sun shines on them they will turn green, that is not good.

You have to realise the problem is caused because generally they are up to 12 months old before you get them. Speculators buy all that are lifted and keep them in warehouses. These people run what is known as future markets, the plan is to keep prices high by releasing a few at a time. As soon as you have bought them they start to germinate, don't eat them if they are going green as well, they are poisonous.

Potatoes sprout after being exposed to light or warm temperatures. If you cut an apple into slices and put that in the bag it will extract the extra moisture and help them to not sprout.

Buy fewer at a time, first of all...
Store them in a cloth bag someplace like the garage, and put an apple in the bag with them. Why it works, I don't know, but it does....

old potatoes are at the end of their season they will try to reproduce (grow in to new plants) especially if damp. use them up quickly and keep as dry as possible.
