You may think that the items on a couples wedding registry are boring, but the couple chooses these items because they are items that they want or need for they new life together.
If you want to jazz up an item off of the registry, pick some complementary item of your own. For example if you purchase a set of silverware, or other kitchen item add a great cookbook with lots of healthy recipes that they will both enjoy.
You can always dress up the purchase in a pretty basket accented with ribbons complementing the wedding colors. You could chose a less expensive item from the registry, and add in other items that will be more personal based on your relationship with the bride and groom, some Hockey tickets for the groom and some decorative items for the bride....

At the very least, make sure that what you buy doesn't have an equivalent on the registry--it's not only a matter of getting them something they won't need, but you don't want to waste your money on something they can't use. It's nice if everything matches at least in style.

I usually go with something from the registry and play it up. ie: if they have a vase or something picked out, get that and then get like $50 in ones and fold them up all cool and put in the vase. (I may be kind of annoying to unfold them all but it's still pretty cool, not to mention it's cash- everyone loves gettting cash.) I know it's borring to buy off the registry, I hate doing it too. But it really is the stuff they picked out. The only thing I actually got from my registry was a table top stand mixer- and I LOVE it! I wish we'd gotten more from our registry. We picked out the colors we liked and no one got them, all we got was stuff in white (goes with everything)... so now all we have is white. Made us have to change our color scheme in a couple rooms. Go with the registry, and then give a gift card too or some cash... trust me, they'll thank you!

The registry might be boring, but I can say that I loved every gift that I got off my registry. There is a reason they registered for the gifts.

I always think something nice for entertaining is a good gift...go to a nice gift store and look for a silver platter or a salad serving set or pasta set...if you check the items on the registry first, you can get an idea of their general tastes--do they like more contemporary lines or ornate things--and choose something based on their tastes.

How about a basket of romantic goodies for them to share together. Buy a bottle of champagne, two champagne glasses, some candles in a nice scent (pier one has great ones), massage lotion or oil, a book on massage for couples, a cd of love music, maybe some chocolates, a gift certificate to victoria secrets or equal store. Really you can add whatever else you think might "get them in the mood." I have given this to a couple of my friends for shower gifts and they absolutely loved it.

Commission a local potter to create a really nice flower vase or serving dish or platter or ceramic tile using hockey as a motif - use husband's favorite team colors.

I applaud you, gift registry is so cliche. I would shop for something unique, yet usable. Say a nice tea set or decorative wall clock [Kit-Kat or other animated clocks are fun]. Perhaps a pair of personalized ceramic mugs?
