Because then he would have been taller that Mr. Rourke and him shouting "Da Plane, Da Plane" just wouldn't have been the same coming from someone 6'6" tall. I used to like to watch that show, came on right after Love Boat on Saturday nights.

That guy got more action as a cute little guy, so he did not wish for height. Besides, his height was a little eerie, implying elven-like powers, just as Mr. Roarke's white suit was oddly eerie.
