I'm a fan of good greens (not iceberg), onion, tomato, cucumbers and feta with a olive oil and balsamic vinegarette. Put in salt and pepper and garlic salt/powder (put in a dash of sugar if you want to cut the vinegar). I like it vinegary so i put alot of vinegar in it. I also like making in a a tupperware so i just put the lid on and and shake it up to toss. It's really good!

I think a great way to break the monotony of salad after salad is to stop thinking salad = lettuce. Try some of these ideas and then start thinking UNgreen. Search for salads with asparagus, cucumber, eggplant, beets, fennel or almost any other vegetable as it's main ingredient. I love a salad of orange slices and red onion. Every day in Italy I tried to have an insalada Caprese - tomatoes, basil and fresh mozarella cheese.

Check out what they're selling at stores and restaurants and duplicate what they have. Also, whip something up based on what you have at home. Make the protein and lettuce a small portion and fill it with leftovers from a veggie platter or stir fry, bell peppers, tomatoes, celery, mushrooms, etc. You can kick it up with raisins, sunflower seeds, nuts, grapes, oranges, etc. Use a theme and add the appropriate filling. Unless you're using spinach, most greens are basically water with very little nutritional value. Fill up on the goods stuff and take it easy with the dressings. For bottled dressings, pay attention to the serving size. We do that and don't always need the entire serving of dressing.

I came up with a great lite salad. Use the dressing lightly.
1 bag Spring salad mix
3 Chicken breasts boneless and skinless
1 pint strawberries
1 pint cherry tomatoes
1 hand full croutons (optional)
1 bottle Lowery's Hawaiian marinade
1 bottle of the expensive vinaigrette ( has a big strawberry on label I found it at Publix on top shelve)

Marinade chix breast in Hawaiian marinade for about 45min. place salad on plates and cut strawberries in quarters and cherry tomatoes in 1/2 place around edge of plate alternating between the two. Heat pan on stove on medium-medium high and place chicken in pan not draining off too much marinade and cook until juices run clear. the marinade will form a kind of glaze. Remove to a plate a let cool slightly. Place curtons on center of salad to hold up chicken. Slice chicken in to strips and place in the center on top of the croutons and drizzle with dressing. Enjoy. It sounds like a lot but is extremely easy. prep time took me about 10min and cook time was about 15-20min. E-mail and let me know if you tried it and if u liked!!

a quick salad is thinly sliced fennel. Segment an orange over the bowl letting the juice drip into bowl. Squeeze any remaining juice over the fennel.mix all together in a bowl Add some toasted walnuts and a little olive oil with a tablespoon of balsamic vinegar

One salad I have loved is
2 Tb Boursin cheese, room temp
2 cups romaine
rasp vinaigrette of your choice
2 TB fresh blueberries and raspberries
2 TB candied walnuts.
sliced avocado
layer everything but the Boursin and dot that on the top. Sounds like it would be too sweet but it isn't.

My favorite salads are ones you throw everything into! Lettuce, tomatoes, celery, red or green peppers, banana peppers, carrots, sunflower seeds, strawberries, grapes, apples, walnuts, croutons, pumpkin seeds, black pepper, green onion, Cheddar cheese, Parmesan cheese, oriental noodles, bacon, chicken strips and anything else you can think of! My husband thought it was gross the first time he saw me throw strawberries and grapes in a salad, but now it's his favorite! try switching dressings for more variety. My favorite is Annie's Goddess Dressing

There are many different ways to make a salad fun and delish
-make it fruity! : luttace, italian or just oil vinegar dressing, mandarin oranges, strawberries, pineapples, and any other you prefer, you could add some fat free/low fat cheese

or

-all veggies, make a salad of vegetables, also add any dressing you like and some cheese! you can use some crackers low in fat such as saltines!

add chicken to your salads, fruits, veggies, cottage cheese, egg whites, fat free yummies!

I used to make one with tri-color rotini, low-fat Italian dressing, tomatoes, mushrooms, basil, oregano, salt and pepper, and garlic. Then I'd top it with just a bit of feta. And really, you can put any veggies in that you want!

My favorite salad is actually from TGIFridays, but I make it at home all the time. . . . They take chicken and bread it with crushed up pecans, and then bake it. You could adapt this coating to fit your diet. Then they toss with with dried cranberries, nuts, lettuce and mini slices of oranges. So good.
