Most of the mobile phone batteries have three terminals. One of them is obviously the positive terminal of the battery and the second is its negative terminal, but, what is the function of the third terminal?

There is a third terminal to power the citcuit board inside. You just don't have batteries in there. The circuit board tries to balance battery voltages as they charge, regulate current and test for overheaqting.

the two end terminal are use for charging among them 1 is positive and other is negative. and the middle one is use for the sensing purpose eg. some charges has indication of voltage and current often it use for the temperature sensing purpose.
