Perhaps it could be that so many people are trained to think like everyone else. Being a product of the public school system has a huge impact on this. He can guess what's on your mind as many that have come before you, think exactly as you do.
The only way to keep him from "reading" your thoughts is to work hard at original thinking. Take what you know of the world and throw it away. Think problems, situations, and concepts through to the end. Constantly ask yourself the "what if" questions and come up with your own logical solutions. People believe in God because so many people have told them that's what they should do. If they would really take in all of the evidence, many would think differently than they do. Free your mind and it will become a blank slate to him.

First of all, you say "People insist". You do not know directly that this person can read your mind, nor have you provided any evidence that he can. If he can read your mind, you should be able to go up to him and however illogical this may seem, you should ask him what you are thinking of. Unless we've all been majorly duped, he won't be able to read your mind.

Repeat these lines over and over in your mind:
"The potion with the poison's in the vessel with the pestle.
The chalice from the palace has the brew that is true."
If he can read your mind, that should give him something to think about.

Tin foil hat..
You and the professor can compete we will call the contest "Who's More Nutsy CooCoo." It will be on Pay-Per-View...
Seems to me the professor will get bored quickly reading your mind, there isn't much there to read anyway..

The easiest thing to do to prevent someone from reading your thoughts is to not write down your thoughts anywhere.

As I understand it, wearing tin foil is supposed to cause interference. Also thinking in another language should help.

Learn self control and simply do not have any thoughts.
Do this by SLIGHTLY crossing your eyes when you go on a walk. You wont notice anything at first, but one day you will realize that you stop all of your inner dialog completely. Then learn to turn your inner dialog on and off at will.
