Confetti Bites

2 pkg (8 oz) crescent rolls
2 pkg (8 oz) cream cheese, softened
3 tbs. mayonnaise or Miracle Whip
1/2 tsp. basil leaves
1/4 tsp. garlic powder
2 c. finely chopped veggies
Salad Supreme

Press crescent roll dough into baking sheet. Bake at 350 for 12-15 minutes. Combine cream cheese, garlic, mayo and basil. Spread over cooled crust. Top with chopped veggies and salad supreme. Cut into squares to serve.

Jalapeno Poppers

25 large jalapenos
8 oz. softened cream cheese
12 oz. mild shredded cheddar
1 1/2 tsp. worchestershire sauce
4 slices bacon, crisp & crumbled

Slice & seed jalapenos. Mix remaining ingredients, less bacon, and fill jalapenos. Sprinkle bacon on top. Bake at 400 for 5 monutes or until warm; could broil for 2-3 minutes instead.

These are my all time favorite appetizers!

Brie En Croute:

1 large wheel of Brie
1 jar Caramel Ice Cream Topping
1/2 cup chopped pecans
1 sheet Puff Pastry
1 egg mixed with 1/2 cup water

Roll puff pastry sheet to make a large rectangle. Place brie in the center, making sure that you can pull the edges up and completely cover the cheese. Mix 1/2 cup of the caramel sauce with the pecans and spoon on top of the brie. Pull edges up to form a "bundle" and secure with butchers or bakers string. Trim the edges of puff pastry top to form decorative leaf shapes, folding over gently and press into pastry. Trim excess string. Brush with egg mixture and place on greased cookie sheet. Bake at 350 degrees until pastry is golden and puffed. Carefully remove and place on serving dish. Serve cheese with whole grain crackers or sliced baguette.

Take a can of smoked oysters, wrap each oyster with a small piece of good bacon and skewer with a toothpick. Bake or broil on a broiling pan or on a rake in a shallow pan until bacon is cooked. Serve.

Can do the same with scallops, smoked or raw, just cook the bacon until just done, but still flexible, then wrap and bake. Scallops get real chewy when over-cooked.

Never fails to wow.

these are my favorites

Avocado with Honey Sauce

1 onion, finely chopped
1 teaspoon prepared mustard
1/2 cup honey
1/2 cup lemon juice
1/2 cup olive oil
4 avocados, peeled and cut into wedges
1 grapefruit, peeled and divided

Mix together the onion, mustard, honey, lemon juice and olive oil. Chill for 30 minutes. Arrange the avocado wedges and grapefruit sections on four plates. Spoon the honey sauce over each portion and serve


Fried zucchini

zucchini, salt, pepper, flour, oil

Wash zucchini and cut to thin slices or big cubes . Mix flour and salt. Dip zucchini in mixture and fry in hot oil. Drain of papper towel.

1 Box Kraft Mac n cheese
1 cup of your favorite yellow cheese
1pack of Ritz vegetable flavored Crackers(You will need to crush these)
1 Tsp Parsley
1 Tsp Starch

#1 Cook mac and cheese as box directions
#2 place in glass casserole dish
#3 stir in 1 Tsp starch & 1 cup extra cheese
#4 Sprinkle parsley on top
#5 Bake at 350 for 20 min
#6 Remove & top with Crushed Ritz
#7 Bake For 5-7 Min
# It's Ready to eat

Shrimp puffs!!! they have shrimp, cream cheese, green onions, fresh garlic, a little lemon juice, and cayenne pepper. YUMMY!

You boil your shrimp--let cool. After they have cooled, send them through the food processor real quick.. You want to kind of chop them good but not make a paste.

Take the softened cream cheese, and mix in green onions, garlic, lemon juice and cayenne. Once it is mixed, add the shrimp and mix. Then spread that mixture onto bread points. Put under the broiler until golden and bubbly. Enjoy!!!

Toffee Cheese Puffs Recipe

INGREDIENTS:
1 (12 ounce) bag baked crunchy cheese puffs
Vegetable cooking spray
2 cups light brown sugar, packed
1 cup (2 sticks) margarine (do not use soft/whipped margarine or butter )
1/2 cup light corn syrup
1/2 teaspoon baking soda

PREPARATION:
Preheat oven to 250 F. Line a jelly roll baking pan with nonstick foil.
Spray a very large metal mixing bowl with cooking spray. Fill with the cheese puffs and set aside.
Combine brown sugar, margarine, and corn syrup in a medium heavy saucepan. Bring to a boil, reduce to low, and cook for 5 minutes, stirring often. Watch carefully that it does not boil over. Remove from heat and stir in baking soda. It will foam a bit and turn creamy in color.
Immediately pour mixture over the cheese puffs. Use two large spoons to toss thoroughly to coat. Spread out on the prepared baking pan and bake for 1 hour, stirring every 15 minutes to separate. When done, stir one last time to separate. Pour onto parchment paper and spread in a single layer to cool. Seal these snacks tightly to store.

Mini Sausage Quiches Recipe

INGREDIENTS:
1 sheet frozen puff pastry, thawed but unfolded
1 sheet frozen puff pastry, thawed but unfolded
1/2 pound bulk pork country sausage, hot or mild
1/4 cup finely minced sweet onion
1/4 cup finely diced sweet red bell pepper
1 clove finely minced garlic
4 ounces cream cheese (1/2 large block), at room temperature
1/8 tsp dry mustard powder
1/4 tsp ground sage
1/4 tsp ground thyme
1/4 tsp onion powder
1/2 tsp salt
Dash of hot sauce, to taste
Dash Worcestershire sauce
2 eggs
Shredded Gruyere or Swiss cheese

PREPARATION:
Preheat oven to 400 degrees F. Grease mini-muffin pans.

On a lightly floured board, place unfolded thawed puff pastry sheet and roll out into a rectangle 12 x 14 inches and about 1/8-inch thick. Using a 2-1/2-inch biscuit cutter, cut 24 rounds. Fit rounds into mini-muffin cups.

Gently saute sausage, sweet onion, red bell pepper, and garlic together until meat is no longer pink, breaking it up as you go. Drain off fat and cool to room temperature. Place 1/2 to 1 tablespoon sausage mixture into each pastry cup.

Blend cream cheese, dry mustard, sage, thyme, onion powder, salt, hot sauce, and Worcestershire sauce until smooth. Beat in eggs, one at a time, just until incorporated.

Spoon egg and cheese mixture over sausage in each cup. Top with a sprinkling of Gruyere or Swiss cheese.

Bake 10 minutes until puffed and golden. Serve warm.

May be baked ahead and frozen. Reheat in a 350-degree F. oven for 15 to 20 minutes.

The best and only appetiser I ever make is to drain a dozen oysters (reserving the juice) and marinade them in malt vinegar and white pepper.
Serve.
That's it.
Yum.
