Loading up on carbohydrates replenishes the muscle and liver glycogen. Not only is this necessary to have energy for the athletic event, but a low liver glycogen level is one of the triggers for the body to break down muscle to make glucose for the brain and kidneys.

It takes about 12 hours (at least) to replenish glycogen stores so it is necessary to have a good dinner on the day prior to the athletic event.
