¿Qué coleccionas?

and depending on the context, also

collect = congregar, juntar, recoger; colectar, recaudar, cobrar; recobrarse, reponerse (to collect oneself)

It depends on the context. If you're speaking to one person in an informal tone, it's ¿Qué recoges? If you're speaking to one person in a formal tone, it's ¿Qué recoge? If you're speaking to more than one person at a time, it's ¿Qué recogen?
