Adam and Eve are a metaphor for the first people who evolved beyond the animal stage, and understood the difference between right and wrong. Once a person understands the difference between right and wrong, one becomes accountable before God to do right.
If one looks at the story as the struggle of a nomadic tribe to uunderstand the Infinate, it is pretty simple. the snake is the lower, reptillian, less-evolved self. the tree of the knowlege of good and evil is desirable, but comes with consequences. The part about Eve enticing Adam to know the difference between right and wrong is blindingly simple---women want their men to know the difference between right and wrong, and apply constant pressure thereto.---good luck, keep thinking, B

A creationist does not believe in evolution. Perhaps you are talking about a theistic evolutionist? That is a person who believes that God created the world gradually more or less along the lines of what the majority consider to be the evolutionary process (because there is more than one theory of evolution).
A theistic evolutionist would have some difficulty with the Adam and Eve story, although some who are theistic evolutionists believe that there was just one man and one woman who were evolved at about the same time in God's plan, and that these were Adam and Eve, and had a relationship with God until they rebelled, most of the story in Genesis 1, 2, and 3 being a poetical rendering of all this.
That is not my own view, I am a creationist, but I believe this would be as close an answer to your question as you could get. At least as close as I can come up with.

Creationists dont need to reconcile Adam and Eve with evolution. Creationists who call themselves believers in Christ believe that God created the earth in six days as it is written. He created Adam first, and then Eve from Adam's rib. Some who name Christ as their savior like Hugh Ross the astronomer think that God used evolution to create man . This is absurd. My God is smart enough to speak everything into existance just like it says in His holy word, the Bible. Evolution is the biggest hoax ever to be pulled on man. There is absolutely zero evidence for it. It takes much more faith to believe in evolution then it does God and creation. People want to believe evolution so they can feel good about their sin. They dont want to answer to a higher authority and so evolution gives them a convenient pass from obeying God.. DNA studies have rervealed that all human's share a common gene from one female ... Creationists don't believe in evolution.
Here's the deal. The only reason anybody thinks that the Adam and Eve story is a literal account of the creation of the earth is because it occurs at the beginning of the Bible. If it were a chapter in the book of Revelation, people would understand it without difficulty.

It's common knowledge that evolution teaches all animal/plants came through natural selection. Whats not really taught is how completely new animals show up without the gradual mutations that are expected from evolution.
Evolution teaches that we should see new animals gradually changing from one type to another, but thats not what really happens. The problem is if you look at the fossil record, scientists see one species existing for a long time, then without warning, it disappears for no reason at all (with little or no changes). One of the main problems with evolution is the Cambrian Explosion (http://en.wikipedia.org/wiki/Cambrian_Explosion), where completely new species show up out of nowhere, rather than evolving from one original specie.
The other problem is that life doesn't just come out of nowhere. Life comes from life and nothing else. There was a famous experiment done by Francesco Redi (http://en.wikipedia.org/wiki/Francesco_Redi) that proved that maggots didn't spontaneously come from nothing, but rather from the flies. Since then, almost 400 years later, that proof hasn't been overturned even by modern day science. WHY?
Whats critical to remember is how complex life is. All animals/plants are EXTREMELY COMPLEX that even if we as humans try to make even one single bacteria from scratch, it would be impossible with all our current technology.If we can't do it on purpose, how can we expect nature to do it by accident?
A good example that I read was this: Imagine watching a movie that was playing backwards. You see a decompossing tree come back to life, or a car accident where the cars rearrange themselves from the point of the accident, or a dead bunny rabbit that rearranges itself from nothing but bones back to life... In the real world this doesn't happen. Why? Because it violates the Second Law of Thermodynamics/Entropy. For these things to happen, you need someone to assemble them back to what they were. The more complex things are, the more unlikely they are to happen. And guess what?
Evolutionist still haven't answered where life came from (http://en.wikipedia.org/wiki/Origin_of_life#Miller.27s_experiments). Thats what evolutionist are finding out. Since the discovery of cells, DNA, protiens, genes, form functions within animals, its all becoming that much more harder to prove evolution is true, despite all the new discoveries. Thats why I believe in a Creator, because common sense tells me to look at all the facts.

You are asking creastionists 'who believe in evolution'? That is paradoxal. Creationists do not believe the false teachings of evolution.
You might want to try asking Intelligent Design believers about it. You'll have more luck asking the right groop of people. The biggest ID group is the Discovery Institute. Google them and see what they have to say about it if you really want to know.
As for myself, I am a true creationist. Check out answersingenesis.org for information on how we deny evolution.

God created Adam and Eve 6,000 years ago, in the image of other human beings who had already evolved for millions of years.
Sorry, that's the best i can come up with if I try to mix Genesis and evolution.

The content of our descendence from Adam and Eve is that we are all members of one single species, the same humankind, and we are all equal in that we are the children, as it were, of the same ancestors. To me, that's a very strong statement for equality in general, and very importantly, against any kind of racism or segregation based on ethnic preferences.
It says that members of different ethnic groups are all brethren and we are all descended from the same ancestors. We should consider ourselves equal in all relevant aspects.
