Go with a typed letter - more professional and keep it simple, he doesn't have time to read essays. What you've got there is perfect, "I wish to express my appreciation for your time". Re-iterate your interest in the position and end with something like "I believe with my skills and experience, I can make a positive contribution to your organisation/company etc.". Good luck!

A card or a letter. Don't forget to remind them that you are still interested in the job.
