Hello: Ave or salve (for more than one person: avete/salvete), literally, hi/be healthy.
Goodbye: vale/valete, literally, be strong.

In a letter, the traditional salutation is: plurrimam salutem do, "I give you a big ol' greeting"

Cute phrase: how about carpe diem? Most people translate this as "sieze the day." I think that is way too alpha. carpere is the verb used in plucking fruit. I think a better translation that better fits the tone is "harvest the day while it is ripe."

I think my personal motto is kinda cute:
quisque dies melior postero, "every day is better than the next." It's speciously optimistic without truly being so.

Hello: Salve or ave
Goodbye: Vale

But that's if you're speaking to one person
If to many, than:
Salvete
Valete
