Yes, Vegetable (Soybean) oil and Canola can be substituted for each other.

For deep frying, you can use Peanut, Vegetable, Corn, Canola and Sunflower oil interchangeably.

For salads and sautees, you can add olive oil and extra virgin olive oil in addition the the oils in the list above.
