I don't think you'll like my answer much. The quotes were very interesting and I liked many of them, but I'm a real sucker for quotes by Mark Twain. He has such a good sense of irony, so if I don't get drawn into the religious ramifications of the quote, I do very much like:
"It isn't the parts of the Bible that I can't understand that bother me, it is the parts that I do understand."
