You can steam then, boil them, microwave them but my preference is to bake them with a little olive oil or to saute them with some butter for about 10 mins.

Roasted Peppers stuffed with Mediterranean rattatoue. Take the tops of of three peppers, (red, green and yellow for appearance) ((Three per person)). Place them to one side.. Get mixed vegetables i.e. tomatoes, aubergine, onions, mushrooms, courgettes and some carrots. Dice these down to smallish sized pieces and place into a large saucepan add a tin of chopped tomatoes some chopped garlic and rosemary and simmer down till all of the veg is nice and soft but still has a nice bite to it. Place this mix in to the peppers, place them onto a baking tray and into an oven which has been pre heated to 200 degrees for about 20 Min's with the tops of the peppers that you have removed back on to the mix. For an extra twist.. once the mix is in the peppers you can sprinkle with a little cheese. then place the tops back on. There you have it a really easy dish, that looks like you have spent an eternity on. Have a great dinner party.. if they go down well can i have an invite to the next meal, i will do the washing up. Stuffed Courgettes
4 small courgettes, ends trimmed
3-4 tablespoons olive oil, plus extra to drizzle
3-4 tablespoons balsamic vinegar, to drizzle
250 g ricotta cheese
1/2 teaspoon lemon juice
1/4 cup fresh basil leaves, chopped
50 g pine nuts, toasted
1. Slice the courgettes length ways, using a swivel vegetable peeler - you'll need 24 long strips.
2. Drizzle some of the olive oil and balsamic over two large plates and lay the strips flat, trying not to overlap.
3. Sprinkle with more oil and balsamic; cover and leave to marinate in the fridge for at least 20 minutes. Can be prepared up to 6 hrs ahead.
4. Mix the ricotta with lemon juice and seasoning to taste.
5. mix in the basil and pine nuts.
6. Place 1 tsp of the ricotta mixture onto one end of a courgette strip and roll up.
7. Repeat until you have used up all the filling.
8. Arrange rolls upright on a plate and grind over some black pepper.
9. Drizzle with a little more oil and balsamic vinegar to serve.

Just 2 days ago I used them in a pasta sauce i made.
I sliced them and cooked them with chopped onions first. Then i added the chopped tomatoes. I found that they taste better when they are cut into quite small pieces for this dish.

I'd slice them in half, season with rock salt and black pepper and drizzle with some extra virgin olive oil, pop in a warm-hot oven for around 15 mins. Beautiful.
