Im Diabetec,so I eat alot of chicken,trying to stay away from alot of fatty foods,but to be honest with ya,Im getting sick of cooking it the same way over and over again! I cook it in a fry'n pan with Pam! (boneless) wont eat it no other way! And should I stay away from all red meat? Can you help?

I am not a diabetic, and am concerned about giving you recipes that may not be appropriate for your specific diet. I did do some searching and I came upon these sites that seems to have a LOT of wonderful recipes. I wish I could tell you that I have tried them, but I haven't .... but I looked them over, and a lot of them sound really great! I hope these help...

1. Stir frying with garlic and onions or make chicken piccata
2. Braise minced or whole and add to sphaghetti sauce.
3. Bake season and bake, since you're diabetic I'm assuming you're staying away from bbq sauce, but you can use other seasonings.
4. Steam in paper-wrapped chicken dish.
5. Boil as part of a soup

If all you want to do is pan fry, these dishes can be made in a pan:
Chicken piccata
Chicken scallopini
Chicken Curry
Chicken stir-fried with veggies
Chicken ala king
Chicken using cream of (your choice) soup.
Chicken with taco seasoning

Here's a good one. Cut your chicken into strips and pan sear it with the pam, or a little olive oil, once browned, add sliced green pepper and onion. Wrap this in the lo-cal spinach or flour tortillia wraps. Add lettuce, tomato, guacamole, lofat sour cream, picante sauce or whatever you can have on your restricted diet. Add a fresh fruit salad for dessert, you'll be happy.

cook it in a pan with mushrooms, onions and when it's almost done add a can of chili tomatoes and a can of refried beans. Let it simmer 15-20 minutes, serve over rice cooked in chicken broth or in a flour tortilla. It's so good, plus you can add Montery Jack cheese, sour cream, etc.

Boil the chicken for an hour not cutlets put the boiled chicken in tomato sauce simmer for about 1/2 hour put mushrooms in the sauce as well if you like them, Make a nice healthy salad, And enjoy dinner is served,

I use a product called One Step Chicken, Lemon Herb. It's in the spice section of your grocery store. I follow the directions on the bottle, then I put it in my slow cooker for about 3 hours.
Very tasty, very moist and tender.

i cook my chicken with italian salad dressing instead of with oil, or with chicken broth, or my favorite.........pound the chicken dip it in a little flour, heat a bit of olive oil up in a pan, cook chicken to brown each side, add 4 circle slices of lemon after you flipped chicken once then add a 2 shots of triple sec, let it cook down add a thin slice of butter and you have a great dish with very little fat and lots of flavor

You are good. I eat waht I want.. diabetic or not.

Bake chicken in shake n bake or marinade it and bake it. Grill it....

you can eat red meat. where did you come up with that?

i'm sure the Dr pumped you with drugs already.... like they love to do. Eat what you want. Just excercise. It burns the sugar like crazy!!

like chicken fajitas use a lot veggis like bell peppers gren yellow red .or cook your chicken and shitaky mushrooms,sesame seeds,low sodiom soy sauce. or chicken soup a lot a veggis green zucchini,yellow zucchini,broccoli,garbanzo beans ,carrots is good and healthy

genuinely ! I somewhat have skinless, boneless, breast. My son refuses to consume fowl or any meat with a bone in it. Our one replace student relatively had a terror of bones. on the different hand I relatively have a sister & mom that suck the bones thoroughly sparkling of meat and all tendons...YUK..i'm able to infrequently preserve sitting on a similar table with them !
