Dale's seasoning (use just enough to cover your chops)- I'm tellin' u it's the bomb. you DO NOT have to season your pork chops at all- just let them marinate in the Dale's for about 30 min and place on the grill. Trust me it's SOOOOOOOOOOO GOOD!!!! I promise you won't regret using it if you try it.

Hmmm....How about something with herbs.

INGREDIENTS

1 Cup Pineapple Juice
2-3 dashes Tobasco Sauce
1 clove garlic, minced
1small onion, fine diced
3-4 sprigs each--strip leaves and mince--
fresh tarragon
fresh oregano
fresh thyme
1/2 Teaspoon Salt
1/2 Teaspoon fresh ground black pepper

Place pork chops in a ziploc bag. Combine ingredients in a bowl and pour into bag. Coat chops well and marinade for about an hour, two if they are really thick.

For an added treat, add some wedges of Granny Smith apples to the bag and grill them with the pork chops. They will taste great!

We like stuff spicy here, and when grilling pork we just take a can of chipotle peppers in adobo sauce, mix with some fresh lime juice and add a little bit of kosher salt. Pork chops will be ready in 30 minutes to an hour. Any longer and it might be a little too spicy. It's great on pork tenderloin also, just give it another hour.

You can't really taste the lime, but the acids do a bit of tenderizing action. The peppers add great flavor and spice, and the adobo sauce has tons of great layers of flavor. It's great with rice and grilled veggies on the side, and Margaritas or Limeade.

I don't really care for soy sauce on white meat, because if you let it soak just a little bit too long it gives the meat an unappetizing gray color.

Dales Meat Marinade

Datatech's easy marinade:

one part peanut oil
one part very dry sherry
two parts soy sauce
pressed garlic
grated ginger

I can't tell you the amounts to use of the garlic and ginger.

Combine ingredients and marinate the pork for about 1/2 hour. I usually get the meat marinating and then set up the charcoal grill. By the time the coals are ready, the meat is ready to grill.

I also use this marinade with chicken.

Tip: keep your fresh gingerroot in a jar of sherry in the refrigerator. It keeps the ginger fresh and flavors the sherry to use in sauces and marinades.

6 pork chops (approx 5oz each) 3 Potatoes 3 Carrots 1 onion 2 Cans cream of mushroom soup 1 1/2 Cans of Milk 3 Tbsp Flour salt and pepper Brown the chops in a skillet that has been lightly oiled. As the chops are browning slice the carrots potatoes, onions, and carrots. Place the browned chops in a 9x13 baking dish. Layer on the veggies. In a separate bowl mix the soup and flour until smooth, then add the milk. Pour over the chops and veggies and then cover and bake for 1 hour at 350. Then remove lid and continue to bake for another 15min. ---- Autmn Chop Skillet: Cook 2 pork chop with the following: 1 red bell pepper cut into 1 inch pieces, 1/2 onion chopped into medium to small pieces, and 1 apple sliced. Cook the chops in a tiny bit of oil, brown on one side and turn, add the onions, pepper, and apples. Cook until chops are done and the other ingredients are crisp tender. Serve with rice. ------- Sweet Chop Bake: The next recipe is for as many chops as you want to make. Salt and pepper both sides of the chops, place in a baking dish. Top EACH chop with the following 1 tbsp brown sugar 1 tbsp ketchup 1 slice onion 1 slice lemon Bake at 350 for about 30-45 min depending on how many chops, and how thick they are. This dish creates just a tiny bit of a nice sweet tangy sauce. You can simmer an extra serving or 2 the topping ingredients on the stove top with a little water if you would like. I serve this dish over rice also. Different sounding but very good!!! --- Autmn Chop Skillet: All you need is 2 chops, 1 red bell pepper-cut into 1 in pieces 1 apple peeled and sliced. Season the chops with salt and pepper, cook the chops in a tiny bit of oil, brown on one side and turn, add the onions, pepper, and apples. Cook until chops are done and the other ingredients are crisp tender. Serve with rice.

olive oil, salt, pepper, paprika, red pepper flakes, garlic, onion salt and sugar. The sugar will crystallize when cooking and give it a nice glaze. You can also set a little to the side and add a little ketchup and some brown sugar and vinegar and use as a baster while grilling. Also when it comes to chops you need to cook them slow and off the direct heat to keep them from drying up. with this marinade you only need to have them sit for 30min. up to over night
