Glorious French food by pererson is a good one
Simply French by wells/robuchon is also very well done

If they have some skill and really want to knock peoples socks off
The Sauce Bible by Larousse is outstanding. It is more of a profesional book but can be found easily

As far as french cooking is concerned, I really love
"The French Cooking Course" by Charlotte Turgeon.
It is a huge book, and you don't have to go to France to buy it.
It'll cost you a good $60 new.

I would also highly recommend the New York Times cookbook, or the New York Times International cookbook.
The recipes aren't all french, but they are all directly to the point, and delicious. I grew up around a french family, and simple, fresh, and delicious is the hallmark of french cuisine.

Go to the original source...Julia Child. She wrote the first and most definitive books on french cooking and brought the US out of the bland methods of cooking that were previously used (recipes off the backs of cracker boxes, etc)., did the first cooking show and paved the way for the hundreds of them we have now

Mastering the Art of French Cooking Vols 1 & 2
and/or The French Chef. Amazon offers all of them and each is under $20.00.

PBS also offers DVDs of her cooking shows though I don't know what DVD Region Australia is. They're probably available in Australia.
