even if you don't put in a refrigirator, the hemin bread mix doesn't spoil even after 10 days, what's up with that?

Hi, I am Catholic and know much about Padre(St) Pio; but I had never heard of this bread before now,so I did a search on it and it seems you are right it does keep for days on end.
I cannot give a satisfactory answer to your question though at this time but can only speculate.
The batter mix really should start to go sour if left out more than 3 days or so therefore I wonder is there a good helping of yeast in it? or is the packet touched to a relic of St.Pio?
It sure is fascinating though, enjoy your bread.

Cardinal, Ricardo Vidal from receiving this so called "holy bread of Padre Pio".

It is a spiritual fallacy/false belief and there is no recommendation coming from Italy about it nor from San Giovanni Rotundo which is the monastery where Padre Pio lived and died.

It is also the official center of the Padre Pio devotion throughout the world.

This is not even acknowledged by the Padre Pio Contemplative Community here in Cebu as being publicized by its spiritual director, Fr. Nilo Igloria.

Instead, we are encouraged to give reverence to geniune relics officially endorsed by the church."

Stop the chain. Toss the dough. Leavened and unleavened dough left unattended for 10 days can spoil. Extremely harmful bacteria can set up in it. This is why sourdough bread starter must be carefully monitored.

lots of bread cn last a couple of weeks and still be eatin.
Now if your talking a couple of months, then maybe we have something.
