Are there any practices of human medicine that can cross over to animal medicine without having to attend vet school?

Biochemistry -specially the intermediary metabolism involving citric acid cycle is common. A biochemistry lab scientist may with some training practise in vet lab.

Not really...Veternarians and Physicians are two different professions with their own training requirements and professional examinations. So unless you have dual degrees, it's either one or the other.

Unless you are in research, so if you're Ph.D., those folks can certainly cross areas and collaberate between Vet Med and Med like examining the effects of XYZ hormone on cows and then looking at human effects as well.
