The official text is not "I am therefore..." but a lot of people say that, so I assume you mean the original text.

René Descartes said "I doubt therefore..."

It's from part 1 of his "Principles of Philosophy" and part 4 of his "Discourse on the Method."

Original quote: "Dubito ergo cogito; Cogito ergo sum"

Well, I want to say "am" although:

1.) It's not the original text, I know that much.
and
2.) It's not all that true, and it implies the latter statement.
