Encantarse= be lost in thought
Encantar= love; cast a spell on

Me encanta el español =I love Spanish

Here is from the verb "encantar" and "me " is the reflexive pronoun.

It's reflexive, because of the "se" on the end of the verb. The "me" does not get translated for another word exactly. It's just part of the complete verb form.

Me encanta X = I love X (where X is an object or concept, and not a live person)

You don't. You would respond with jejeje which is equivalent to lol in Spanish. Lol is an English slang term therefore it does not exist.

As far as I know the verb in infinitiv is "encantar"
You use it as " me encanta" when you want to say "I like it" or "it pleases me", so that is why you say "me, te , le, nos......."( you have to use the reflexiv pronoun)

You are not saying "i love spanish" in fact what you are literally saying is "Spanish pleases me". So thats where the "me" comes into it. It is a reflexive verb.

Me encanta el español - is correct
(me is "I") whenever it´s me it refers to I.
te encanta bailar is you like dancing
Le encanta leer is he or she likes reading
Les encanta dormir is they like sleeping

I think this answers your question.

if you keep it conjugated, you don't need the me in encantarse (or le in the encantarse case)
