Most casinos have their own websites to get careers through.

You may want to start with http://www.harrahs.com/, they own many casinos throughout the US and you can access all openings through their careers link at the bottom of the main page.

If you are looking to become a dealer i would suggest checking out www.casinocollege.com. They train on most table games and are relatively cheap compares to other schools

I don't know of a site but having lived in Las Vegas for more than thirty years the following careers/jobs are available but don't advertise online.

Cocktail waitress (eye candy looks makes a big dif)
Bartender (requires specific school and experience)
Dealer (requires specific schooling available here)
Accountant/bookkeeper (like any other job requirements)
Waitress (usual stuff)
Performer (that is a big issue and you have to have talent, etc.)

Once you decide on the type of career/job, contact the hotel/casino human resources department for directions on applying. Vegas is all about look, skill and attitude!
