Someone took them out of the nitrous oxide environment in which they were shipped, leaving them suseptible to things like ethylene.

there are enzymes that change the banana by oxidizing it...well ok this is mainly for when you cut a banana and leave it for a while...if you mean a banana in general its just the phases of ripening and the brown phase as correctly said before is due to ethylene (plant hormone for ripeing fruit),
