what can i use as a substitute because of my lack of these classic sweeteners? can i use regular pancake syrup instead of maple?

You could use sweet n low, equal or splenda.
However pancake syrup probably will not work as well.

Well u could substitute plain sugar & a lil syrup for the brown sugar, but you really need some kind of flavoring. Do you have other extracts? Almond or something? It's just not chocolate chip cookie dough without brown sugar & vanilla.

Borrow some sugar from a neighbor and promise to bring them some of the cookies??

Maple Syrup Cookies

Make the dough the night before you plan to bake these cookies.

Ingredients
3/4 cup sugar + extra for dusting
1 cup (8oz.) unsalted butter, softened
1/2 cup pure maple syrup
1 teaspoon vanilla
1 egg yolk
3 cups unbleached, all-purpose flour
1/4 teaspoon salt

The day before you plan to make the cookies, make the dough:
1. Beat together the sugar and butter with an electric beater on high speed for about 3 minutes.

2. Add the maple syrup, vanilla and egg yolk and mix for 1 minute.

4. Sift the flour and salt directly into the butter/sugar mixture. Beat at medium speed until combined - about 2 minutes.

5. Shape the dough into a ball, wrap in plastic, and refrigerate overnight.

Preheat oven to 350°F. To make the cookies:
1. Butter two baking sheets.

2. Divide the dough into two equal portions. Working with 1 portion at a time, roll it out on a lightly floured surface to about 1/8-inch thick.

3. Cut out shapes with a cookie cutter and place on prepared cookie sheets, about 1 inch apart.

4. Gather scraps, reroll and cut out as many additional cookies as possible. Repeat with second dough portion. Dust the cookies with granulated sugar.

5. Bake for 9-12 minutes, until they are lightly golden. Remove and cool on racks.

If you have a recipe calling for syrup as a sweetener, then YES you can use pancake syrup instead of pure maple.

Otherwise, go borrow 2 cups fo sugar froma neighbor!

YIKES! I think I'd have to cave and go to the store...

I wouldn't try maple syrup because there are so many additives in it that it's very little actual syrup anymore.

Do you have any Karo syrup? That would work, but you'd want to use less Karo than sugar...But I'm not really sure how much less. Sorry to not really be helpful lol.

Give it a try. It is maple flavored corn syrup. Remember to compensate for the added moisture in the syrup.

Go Buy your friend some cookies. I know it's not the same, but it has to taste better than pancake syrup cookies. Your friend will understand.
