ARTICHOKE, MUSHROOM AND OLIVE SALAD

1 (14 oz.) can artichoke hearts
1 (7 oz.) jar salad olives or 1 c. pimento stuffed olives, cut in half
1 (8 oz.) can mushrooms
1/4 c. oil
1/4 c. red wine vinegar
1 tsp. minced garlic
1 tbsp. dried parsley
1 1/2 tsp. dried sweet basil
1/4 tsp. salt
1/4 tsp. pepper

Drain artichoke hearts; rinse with cold water and cut in half. Drain olives and mushrooms. Gently mix well drained vegetables in large bowl. In jar mix remaining ingredients and shake well until blended. Toss dressing with vegetables. Stir occasionally. Cover salad lightly.

Or serve Steak, or Veal and let spaghetti be the side!

A small rib-eye steak, grilled pork loin or even shrimp scampi......For different sides, try steamed asparagus, grilled corn on the cob or fresh green beans cooked with onion & garlic.....No matter what, there has got to be plenty of homemade garlic bread!!

you could try different kinds of bread like cornbread or breadsticks and maybe jazz up the salad with nuts or cheese or fruit...i know someone who likes shrimp and mussels with their spaghetti but i've never had it so i'm not too sure about that..

A different variation to the salad. Caprizzi (sp?). Sliced tomato's with fress Mozz and basil with a little olive oil on top. Nothing better when they are all fresh.

Fresh fruit mixed with prosciutto ham. It's delicious. Or you can take canned artichoke hearts, wrap them in proscuitto, secure with toothpicks, dribble with butter, put parmesan on the top and bake til' the cheese is browned. It takes great, too!

I serve Dukkah with sour dough or crispy bread and extra virgin olive oil and a big bowl of delicious olives and marinated eggplant, sundried tomato and artichokes.

You can see what Dukkah is on http://www.ausfood.com.au/catalog/index.php/cPath/37

You dip your bread in a shallow bowl of the oil and then into the dukkah. You can make your own dukkah if you like. It is so delicious.
