to say 'hi', you can use;

"oi" - hi
"olá'' - hello
''bom dia'' - good day

and for 'how are you doing';

''tudo bem?'' - everything fine?
''como está (você)?'' - how are you?
''como vai?'' - how are you going?
''como estão as coisas?'' - how are things?
''e aí?'' - (pretty informal, literally means 'and there?' but it has the same meaning as how are you)

yeah, depends... do you mean brazilian portuguese or portuguese portuguese... in brazil you say "oi, tudo bem?" in portugal you´d say "ola! como estás?"
