Clipping both wings defeats the purpose. When the wings are equal they can still fly most of the time. The trick is to only do one. That way the chicken will be off balance.

And, they can fly.

I wouldn't cut anything without having something visual to refer to. Check out chicken internet sites.

The person who told you that chickens don't fly hasn't ever seen one do it now have they?
I like to go to my henhouse about an hour after the chickens have gone to roost. . they tend to be in a trance/asleep and they are much easier to handle.
I grab up a hen either by her feet or by placing my hands over the top of their body all the while keeping their wings close to their bodies and then grabbing them by their feet.
I hold the feet with one hand,out stretching the wing and holding it with my knee and clip the feathers with my other hand.
I clip most all of the feathers along the wing on both wings. I start out clipping about half of the length of the wing feathers. This is usually enough feathers to stop the flying but once in a while you get a bird who insists on flying and then I go back and take more of the wing feathers.
The feathers will grow back but usually after clipping them once and the bird realizes it can't fly it usually doesn't try anymore and I rarely have to do it a second time.

I guess the Wings. When you hold the chicken and pull a wing out your see the feathers. Just be sure you not cut into the skin. You can probably see the length of the feathers and cut about 1/3 to 1/2. 1/3 may be plenty as Chickens not good fliers except for Bantams.
