Are they all actually princes? Is that how their government operates? Are these lands? being governed by demon princes literal or symbolic?

There is a spiritual hierarchy, even among the demons. I've heard it said that they never break ranks. The bible describes them as "principalities and powers, spiritual wickedness in high places". Satan's one ambition, knowing his end will be the lake of fire, is to kill, cheat, lie, destroy, and make sure as many people will go with him into that lake of fire as he can get.
It is quite literal. But greater is He than is in a believer (God) than he who is in the world (satan). And the weapons of our warfare are not carnal, but spiritual (prayer), mighty in God for the pulling down of strongholds. Prayer in Jesus' name is more powerful than we know; it literally stops satan in his tracks.

They way I understand it is there are demons assigned to different areas of the underworld that correspond with our areas on Earth. These areas are separated into "states" or "counties," so to speak. These states and counties are principalities. There's a system just like the way our govenment is set up; President, Senators, Congressman, Govenors, ...... I think it's literal, not symbolic, you just can't see the actually boundary lines like on a map. But you can definately tell when you go from one demon's territory into another's.

The "principalities" is a hierarchy of the "choirs of angels" (of which there are 9) according to Catholic teaching. Their "duties" are allegedly, executive in regard to the visible world of men, guard the nations of the earth, etc. Archangels are part of the principalities... I'll let you do the math on the alleged fallen Archangel...
