we buy the Southern Fried Chicken coating (powder) in packets from supermarkets, but are interested in making our own.

this is all i could find. 3 cups all-purpose flour
1 tablespoon seasoned salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon coarse ground black pepper
2 eggs
4 cups buttermilk
1 cup barbeque sauce
2 tablespoons Worcestershire sauce
1 tablespoon steak sauce
1 whole chicken, cut into pieces
2 cups oil for frying
DIRECTIONS
In a large shallow dish, mix together flour, seasoned salt, garlic powder, onion powder, and black pepper. In a separate bowl, beat eggs, then whisk in buttermilk, barbeque sauce, Worcestershire sauce, and steak sauce.
Dredge chicken in milk mixture, then in seasoned flour, alternating in each at least twice. Heat oil in a large, deep-sided skillet to 375 degrees F (190 degrees C).
Cook chicken in hot oil until golden brown on both sides, about 10 minutes each side.

IF you want to make the very best fried chicken ever....this is the only way.
Start with getting a seasoned black iron skillet. Also, you will want to have SELF RISING FLOUR on hand. If you can find it, White Lily Self Rising flour is the best, but any self rising flour will do, just be sure it's not all purpose flour. Then, beat a couple of eggs and put to the side. Put your flour on some waxed paper and lay the chicken pieces on the flour and season before coating with the flour. I usually will season with pepper and Lawry's Seasoned Salt. Then completely coat the chicken with the flour and dip in the beaten egg. After dipping the chicken into the egg, then recoat with the flour. After this, put about an inch and a half of corn oil in your black iron skillet and heat oil until it is hot enough to fry the chicken in. Just put a piece in when you think it is hot enough and when it begins to fry, put your other chicken pieces in and let them all begin to fry and then lower your temperature to medium heat and fry until the chicken is golden brown. Drain on paper towels and serve while hot. I promise you this will be the best chicken you have ever tasted in your life and if you don't get it right the first time (sometimes it takes practice to know when to turn the heat down etc.) you will get it right the second time and you will be famous for your fried chicken. Whenever I am requested to make a dish for any kind of gathering or for someone who's ill, my fried chicken is what they want. Have fun!!!

Well to be honest southern fried chicken is the method of cooking rather than in the coating, but you can make your on coating with 1 cup flour 1/4 cup corn meal and 3 tables spoons of any Cajun seasoning of your choosing.

Deep South Fried Chicken
1 cup shortening
2 cups all-purpose flour
1 tsp salt
1 tsp ground black pepper
1 (2 to 3 pound) whole chicken, cut into pieces

1 Heat the shortening in a large, cast iron skillet over medium-high
2 heat.
3 In a brown paper lunch bag, combine the flour, salt, and pepper.
4 Shake two chicken pieces in the bag to coat, and place them in the
5 skillet. Repeat until all of the chicken is coated and in the skillet.
6 Fry the chicken over medium-high heat until all of the pieces have
7 been browned on both sides. Turn the heat to medium-low, cover, and cook
8 for 25 minutes. Remove the lid, and increase heat to medium-high.
9 Continue frying until chicken pieces are a deep golden brown, and the juices
10 run clear.
Servings: 8

You may want to soak chicken in buttermilk with tabasco first (I do) and also you may like to add some cayenne, onion and garlic powders to the flour mix as well.

First you take a Chicken from the South,and put a Jacket on it...this is the Coating? And then you place 'em in an Electric Chair,and then you pull the switch...this will effectively Fry 'em! And there you have it...Southern Fried Chicken Y'all! Actually I just put this on...in order to preserve this site-so I can try all the recipe's that are being submitted by you Ladie's and Gent's for this Question! thx.theerrander

The coating is just flour, salt, pepper. Dredge the chicken in an egg wash or melted butter and then dust with the flour mixture (I put the flour in a bag and drop the chicken in and shake it for a few seconds to coat it. Fry in hot, CLEAN grease. Peanut oil will give you the lightest chicken. More dense oils will give you more greasy chicken. Either way you will need to drain the pieces on paper or paper towels or napkins when they are done to absorb as much of the grease as possible.

You can oven fry without really frying chicken, also. In this case, dredge the chicken in melted butter and then the flour mixture and line a baking dish with the chicken and bake at 375 degrees to 400 degrees until the chicken is golden and done in the middle.

A yummy alternative to flour (but it won't meet your 'southern' requirement) is to use seasoned bread crumbs for the coating. And you can even use ground saltines and that's the yummiest of all in my opinion.

Try the following

Southern-fried chicken

For the marinade
600ml/1 pint buttermilk
6 tbsp coriander, chopped
6 garlic cloves, finely chopped
2 shallots, finely chopped
½ tsp dried chilli flakes
1 tbsp salt
4 x 175g chicken breasts, skinless
For the coating
6 tbsp plain flour
½ tsp celery salt
½ tsp cayenne pepper
½ tsp ground black pepper
½ tsp paprika
To cook the chicken
200ml vegetable oil
black pepper

Method
1. Combine all the ingredients for the marinade and coat the chicken in a shallow dish. Cover and leave to marinate overnight in the fridge.
2. Combine all the ingredients for the coating. Remove the chicken from the marinade and dip into the spiced flour. Coat thoroughly and return to the fridge for a further 45 minutes.
3. Preheat the oven to 200C/400F/Gas 6.
4. Heat the vegetable oil to in a deep heavy-bottomed saucepan, until a breadcrumb sizzles and browns when dropped in it. (CAUTION: hot oil can be dangerous - do not leave unattended!). Add the chicken and fry until golden all over. Remove and place on a baking sheet.
5. Transfer to the oven and cook for 15-20 minutes until cooked through.

Southern Fried Chicken:

Meaty chicken pieces (breast, wing, thigh, drumstick)
1 egg
A splash of milk
Flour
Dash of black pepper, paprika, and seasoning salt
Oil for frying


Wash the chicken pieces and pat them dry. Scramble the egg and splash of milk together in a bowl. Sift the flour and seasonings into a shallow pan.

Heat the oil (an inch or so) in an iron skillet until it bubbles up when you drop a bit of flour into it.

Dip the chicken pieces in the egg mixture, and roll in the flour mixture until it is well coated.

Place the chicken pieces in the skillet, a few inches apart (it'll take a few batches). Fry on one side until it is more brown than golden, and crispy. Turn the chicken over to fry the other side. Fry it until it is brown (not black), crispy and the juices run clear. Transfer to a plate with paper towels, and keep it warm.

After the chicken is done, drain a little but reserve some of the drippings. Stir in some milk and flour until it begins to thicken. Add a little extra black pepper, stir until its bubbly and thickened. Serve the gravy with the chicken, mashed potatoes and toast. :-)

Hi.
I have a young cousin who operates in a KFC during school hols. Although the stuff arrives in bulk for the purpose of coating the lumps of chicken, it has to show the ingredients.
Ah Ha !
eggs, plain white flour, splash of milk, salt, mixed into a light batter. add tumeric, coriander, garlic paste, and a bit of french mustard, coat the items with the concoction, melted butter, then flour again before dunking them into mad hot sunflower oil.
Job done.

You can do a 3 step breading process which is quite simple, but you're going to have to use 3 seperate containers:

1. All-purpose flour
2. Eggs
3. Bread crumbs

With each step you want to LIGHTLY season them. If you want to keep it simple, just use salt and pepper. Hope this works for you.
