Buy some roses and cut out all the rose pedals. With the pedals shape them into a heart on her/your bed and cover the rest of the bed with pedals surrounding the heart. Inside the heart leave one full rose representing her and the big shaped heart represents your heart and tell her you hold her in your heart or whatever else you can think of ;) you can also buy champagne and two champagne glasses and put set them on the night stand. You can also leave a trail of rose pedals from the door towards the bed. Yes this might be way too chessy but if shes the romantic chessy type she'll love it!
