The way I cook Country Fried Chicken is simple at least to me it is.
I clean and skin my pieces, roll them in egg, { a mixture of flour, cornmeal, ginger, garlic, & lemon pepper, mix up in plastic bag } place chicken in fry pan with Virgin Oil [ enough to cover bottom of pan ] and fry with lid on pan.
For us it comes out well cooked and crispy..... { Oklahoma Style }. Serve with corn bread , mashed potatos and gravy, and corn on the cob...

Here is the way I do it, and I will add a variation you might want to try.
1 - Wash your chicken pieces to prevent salmonella, and rinse in water with a little white vinegar.
2 - Put a cup of all-purpose flour in a 1 gallon freezer bag.
3 - To the flour, add salt, pepper, garlic powder, and other spices of your choice, I like to add Emeril's Essence . Close the bag and shake well to mix the flour and spices.
4 - Pour about an inch of cooking oil, or melted shortening in a large skillet, one that has a lid. Turn the heat on high to heat the oil.
5 - Drop two or three pieces of chicken in into the flour bag, close it and give the bag a good shake to coat well.
6 - Drop the chicken into the hot oil, and cover.
7 - After about 3 minutes, turn the chicken and recover for another 3 minutes.
8 - Turn heat down to medium, medium-low if it is an electric stove, and cook uncovered, turning frequently.
9 - Cook until the internal temperature is 165* F., or until juices run clear when you stick it with a fork.
Variation:
In a large sealable container, mix buttermilk, lightly beaten egg, a few shakes of Tobasco Sauce, and some garlic powder. Add the washed chicken pieces and let sit for at least half an hour.
Put your seasoned flour in a large low-sided pan. Dredge the chicken pieces in the flour until well coated. Fry as directed above.
Enjoy your chicken.

Mix a little milk with an egg or two dependiong on how much chicken your making. Wash the chicken and place the milk and egg to soak for a bit, mom always used sweetened condenced milk, but regular works well to.
Put some flour in a 8x8 baking dish or a pie pan, somthing the chicken can be rolled and flipped in. Season the flour with garlic salt, onion salt, pepper, celey salt(lightly), ceyenne pepper, what ever sounds good to you be creative(season to taste, but seeing how raw flour isnt so good season to smell). Some peple will even use crushed crackers or kellogs flake cereal(not frosted flakes....lol)
preheat some cannola oil(standard), crisco shortening(true south other then lard that is) or olive oil(health concious) in a frying pan over medium heat. Keep at medium heat if the oil is to hot batter will burn and leave the chicken not cooked all the way through. You'll want about 1/4 to 1/2 an inch of oil in the pan.
Take a small pinch of the flour mix and toss it in to the oil and see it starts to fry, if it sinks to the bottom and does nothing keep heating the oil(do not get impatient though and turn up the heat to get it hot faster, oil will heat quickly but cool slowly hot oil will scorch your meal fast)
Once the oil is ready roll and flip the chicken in the flour mix, and then carefully place the chicken in the frying pan. Place as many pieces in the pan as possible but remembering to leave a gap between the pieces of chicken. Flip the chicken frequently to assure even cooking through out( a fork to flip the chicken seem to work best tongs tend to pull the batter off the chicken). First time to flip is you have placed the chicken in the oil, you go back to the flour mix to prepare another piece, once you have placed that piece in the pan flip the piece of chicken that preceeded it to the oil. Once you have the chicken cooking place a lid over the pan but continue to flip the chicken regularly. The lid aids in retaining and helps to distribute the heat more evenly.
You can check the doneness of the chicken by cutting into it and making sure the juices run clear.
Once done frying the chicken you can use the oil and drippings in the pan for a good gravy base. Let the oil cool for a bit and then turn on a low heat under it, add anywhere from 2 to 3 table spoons of unseasoned flour, mixing continuously untill a thin paste is made, (if it gets clumpy fast you added to much flour or your heat is to high, but all is not lost it will just be a lumpy gravy) Add milk to the pan still continuously mixing, add about 3 cups to start, and more if gravy appears to get to thick as it cooks. Cover the pan and simmer over a low heat. Low heat is the key to good gravy. Remember to stir often. Might want to season with a little salt and pepper, or even a touch of liquid smoke.
Serve it up with corn on the cob and mashed taters and you got your self a meal.

Get you one of them big old black skillets like Granny had and put oil in it no more than half way up and let it get nice and hot...put in a piece of bread and if that sizzles then you are ready..wash some chicken and put seasoned salt on them and cover them up get out a bowl and put a cup of plain flour in it and add some seasoned salt as well ...place a piece of chicken in the bowl of flour and roll it around good and gently place it in the pan, dont put any more than 7 pieces into the pan.cook the dark meat first..let it kick around for 8 mins then flip the meat and cook 8 more mins then drain the meat on paper towel and place them in a crockpot on low till time to eat.

ok home made crunchy southern fried chicken extra crispy and juicy my way and it always works. you will need chicken pieces, breadcrumbs, salt , pepper, paprika, chilli, onion shredded, garlic shredded, little mint, flour, 10 grams sugar not more. water a little the flour so it comes almost paste, mix in all other ingredients and keep working it out adding a little water at a time, once you got a reddish mixture roll in the chicken pieces ensuring you cover them all with the mixture, put pieces one at a time in fryer and fry for about 30 minutes in hot oil. thats it mate enjoy
