Salmon loaf! It's just like a meatloaf, but with canned salmon. It's just a can of drained salmon, a handful of breadcrumbs, an egg, and a can of cream of celery soup. You can add dillweed and chopped celery if you want. Just plop it in a meatloaf pan and bake at 350 for about 45 minutes.
There's an old school one I can't find anymore that involves making a medium white sauce. That's good too and I think the way my mother used to make it.

A simple salmon quiche is really good. Mix the salmon with some chopped parsley, some brown breadcrumbs and an egg, and really any sort of fish seasoning you like and add some milk, or better still single cream, pepper and a little saltand put the mixture into a pre-cooked pastry case and bake gently till set. Exact quantities not too important - if the mixture seems a bit dry add another egg. This is good served hot or cold, with salad, or chips and peas, and you can adapt the recipe in all sorts of ways - add chopped peppers, minced onion, etc., etc.

An old fashioned recipe my mom used to make is called Salmon and Peas. She lightly sauteed onions in butter, added a bit of flour. Stir that and let the flour cook a little. Then add milk. Its basically a bechamel sauce. It should be fairly thick. Like making SOS. Add the salmon and peas and warm through. My mom served this on toast. Hope you like it.

salmon casserole just like tuna casserole
pretty much the same way you would use tinned tuna
and seafood balls which is a combination of shrimp, scallops, and salmon formed into balls and deep fried. similar to fish cakes.

Have it with cucumber in a lovely granary bread sandwich!
I put it in a cold pasta salad as an alternative to tuna.
You could use it in a seafood lasagne or fish pie but i tend to use fresh salmon for those two dishes.

I make a tuna and salmon pattie that I fry in a pan. 1 can tuna in water drained,I can salmon cleaned and drained, 1/2 cup bread crumbs,1/4 onion diced,1 egg.mix together and put in hot pan with a little oil turn when browned brown other side. quite yummy with lemon juice.

Tinned salmon is nasty - feed it to the local stray cats.
Buy some fresh salmon fillets instead, wrap it in parma ham, roast and serve with potatoes and whatever veges you like.

We make creamed salmon on toast, you make a bechamel sauce: about 3 tablespoons butter in a pan, melt, add about 1/3 cup flour, then add 2 cups milk, stir til thickened then add your canned salmon that you've separated with a fork, cook long enough to heat through, then serve on toast, add salt and pepper or butter to taste....we also add cooked asparagus pieces

You can use it in a cold pasta salad, or cook some fettucini noodles, add alfredo sauce and the drained, flaked salmon. Actually pretty good in either.
