Here's my recipe for mac and cheese- southern style that's baked. Boil one 8 oz box of elbow noodles until done and drain. Meanwhile, mix together one 12 oz can evaporated milk, 1 cup sour cream, salt/pepper/cayenne to taste, 1 egg, and 8-16 oz cheddar cheese. You can add as much cheese as you want but hold out some of it for the top of the mac and cheese. Mix that together and add in your cooked elbow macaroni. Pour into a greased casserole dish, top with remaining cheese, and bake at 350 degrees for 30 mintues. Check the mac and cheese to see if it's done. If it still looks like it has liquid left you can cook it for longer or take it out if you like creamy mac and cheese.

Being that it is spring/summer. Good southern foods are butter beans, peas (field or purple hull), yellow squash and tomatoes. For meat either chicken or pork chops A must is corn bread.
Check your local farmers market for the vegetables. This way they are fresh. If not available you can get frozen ones in your local grocers freezer.
To cook the butter beans or peas, in a pot put in them in a pot, and cover with water. Bring to a boil and add a little salt. Turn down to low. Just keep an eye on them stirring occasionally. Don't let the water cook out. Will take about 25 minutes to cook - after the boil.
Corn Bread- works best if you have a cast iron skillet to cook in, but can just a cake pan.
1 cup self rising corn meal
1 egg
1/2 cup milk
2 to 3 tbsp vegetable oil
Pre heat oven to 375. If you have a iron skillet - heat the oil in it on the stove. In a bowl, mix the corn meal, egg and milk together till it forms a thick batter like a cake. Carefully add the hot oil in. Mix well. Pour mixture into the skillet and slide into the oven. Will take about 20 minutes to cook or until golden brown. Carefully remove from oven and flip on to plate. and cut.
If you don't have an iron skillet, grease a cake pan well with the oil - might have to use a paper towel to get the pan coated good. Add about 2 tbsps of oil to the batter mix unheated.
As far as cooking the meat, fry it , grilled, broil it.

Simple Sausage Strata
6 slices bread, crust removed
1 pound bulk pork sausage
1 teaspoon prepared mustard
3/4 cup shredded Swiss cheese
3 eggs
1 1/2 cups milk
2/3 cup half-and-half cream
1 pinch pepper
DIRECTIONS
Place bread in a greased 13-in. x 9-in. x 2-in. baking dish; set aside. In a skillet, cook sausage over medium heat until no longer pink; drain. Stir in mustard. Sprinkle sausage and cheese evenly over bread. In a bowl, beat eggs, milk, cream and pepper. Pour over cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Cut into squares; serve immediately.

*Michigan Fried Chicken
You must discover the secret herbs I use, Place them in a separate bowl, 4 eggs, and milks in separate bowls, Scrqamble the eggs.
Dip the chicken in the Milk and Eggs WARSCH! Sprinkle the seasonings in the bowl on the dipped Chicken. Coat the chicken in Flour. Then Deep Fry (or Pan Fry) the chicken for about 15-30 minutes (depending on size) then serve.
*Cornbread
-2/3 cups baking mix
-1 eggs
-1/3 cups sugar
-2 tablespoons oil (preferably Vegetable)
-2 cups of Milk
Mix all of this stuff up and put it in the pan and wait for it to cook (probably about 30-60 minutes).

Okay, I am actually from the south so I can help. Mashed Potatoes, fried okra (you can find it frozen and battered, ready to fry in the freezer section) corn on the cob, sliced tomatoes, and for your meat...maybe barbeque chicken, hambuger steak with brown gravy(slice some mushrooms in it and let it simmer for about 20 mins), or fried catfish. • 1 lb ground beef
• 1 large onion, finely chopped
• 2 cups mushrooms, chopped
• 5 tomatoes, diced
• 2 Tbls all-purpose flour
• 1/2 cup water
• 1/4 cup cider vinegar
• 1/4 cup chili sauce (Heinz)
• 1/4 cup ketchup
• 8 whole-wheat hamburger buns (toasted)
Crumble beef into a large nonstick skillet; cook over medium heat until it starts to sizzle, about 1 minute. Add onion and mushrooms and cook, stirring occasionally, breaking up the meat with a wooden spoon, until the vegetables are soft and the moisture has evaporated, 8-10 minutes. Add tomatoes and flour; stir to combine. Stir in water, vinegar, chili sauce and ketchup and bring to a simmer, stirring often. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce is thickened and the onion is very tender, 8-10 minutes. Serve warm on buns.

1 lb ground beef
1 tsp salt
1/8 tsp ground black pepper
1 green bell pepper, chopped
1 medium onion, chopped
1 pkg macaroni and cheese, prepared as directed
1 16oz can tomatoes, diced w/ liquid
1 12oz can whole kernal corn, drained
1 6oz can tomato paste
Brown ground beef with salt and pepper in a large skillet. Add onion and green pepper; continue cooking until onion is tender. Add corn and tomatoes and tomato paste; heat through. Stir in prepared macaroni and cheese dinner; simmer for 8 to 10 mintues.

southern foods i like are: fried chicken w/ mashed potatos and corn....if you are looking for easy use boneless chicken.. you coat it in egg/milk mixture and then roll it in flour and fry away....Meatloaf is good I buy the mccormick meatloaf seasoning to make it easy for myself...I also love fried pork chops they are very good...you can make some scalloped potatos w/ them...if you cant find a homemade recipes you can buy boxed ones...the velvetta one is the best boxed scalloped potatos!good luck!

oh oh! this ones good! trust me on this...fried chicken...mashed potatoes...and cole slaw!! its soooo good i even kno a site with the recepie for 2 out of 3 (the cole slaw u can buy) the 1st one is chicken...the 2nd is taters(lol)
if u dont like the way its prepared or wanna do another one...theres alot more on each site i put for u^^ i hope he likes it
