I am looking for an explanation and or a diagram that explains how to take the bed extender off

Sorry, I don't have a diagram, but hopefully I can help.
If you open the tailgate, and pull out the two pins that hold the bed extender in the "closed" (in the bed) position, then rotate the bed extender into the "open" (on the tailgate) position, you should see the two brackets that connect the bed extender to the bed (and allow it to swivel). On each of these brackets is a small T/Y-shaped piece that keeps the bed extender from coming off the brackets when you swivel it open. You can push this T/Y piece out of the way to allow the bed extender to slide off the bracket; do the same on the other side, and you should be able to remove the bed extender from the brackets.

I have a 2002 sport trac and all you need to do is rotate the bed extender straight up and pull it out. That is how mine comes out.

Yes in the glove box right next to the pistol, it's called the manual.
