Date an Italian girl but never invite her for dinner or make her presents otherwise it will be more expensive than a course of Italian in a private school....!!
Jokes aside, after you've learnt a basic Italian, the best would be to post in a forum or even in the Yahoo's Italian section. I'm Italian and I've improved a lot my English by reading and answering questions in this section. For yr first starting you could use some of the many Internet links for beginners

http://www.bbc.co.uk/languages/italian/lj/
http://www.cyberitalian.com/html/less_1_main.htm
Also try to watch Italian TV programms on the Sat and listem Italian songs. Speak as much as you can with Italians and try to enter into email correspondence with some Italian pen pal .

Find an itialian community center to volunteer at. Find a nursing home with italian residents and go volunteer or get a part time job there (or some of them have "adopt a grandparent" programs too. You'd be blown away at how excited people are to teach you their native language just in passing. Especially older/retired people. And that way, you'll actually get the stuff you'll use, instead of "The cow is not allowed in the house".

Borrow the Pimsleur language course from your local library. The Pimsleur courses will give you a fantastic foundation to build on, and you can learn on the go since it is all audio. These CDs and tapes do the repetition for you, so they move slowly, but by the time you are done you will have a basic vocabulary that you know well and that you will have learned almost effortlessly.

You could chat with me in English-Italian!

I am Italian, fluent in English.

By the way: the "get an Italian gf" tip works - this is how I became fluent in English. My partner is English, we met in Scotland and we started speaking both English and Italian. He is almost fluent now (well, 8 years later..)!
