Because when you crumple a peace of paper or anything else it usually means that it is trash, that yopu don`t use it no more, so you trow it away, it represents that that thing you crumple is useless to you, and may be useless to others too...so it is a simple gesture but significant.

A sheet of paper does not fly off your hand and travel well in the direction of the bin. Crumpling it makes sure it has a better chance of leaving you hand and gets into the bin with 99% accuracy (depending on trajectory, wind speed, distance, obstacles, domestic feline watching you throw the paper and how frisky it is feeling at the time and whether the bin is already full.)

It is much easier to throw a crumpled ball of paper into the trash than it is to throw a sheet of paper.

Probably due to it will be easily roll into the bigger bin when the cleaning lady come and clean up.
Furthermore, it may due to one don't want other see th eerror he/she write on the paper, so she/he just crumple it before throwing it.

Well, try not eating anything at all today because you left your lunch money at home, and running outside in the FREEZING cold for track practice, then coming home to do shitloads of homework and fighting with your mom. And reading your progress report to see that you are failing 4 classes. And I don't even have an outfit to wear tomorrow. Yes, that was my day. It was a solid 2.

To save room in the trash?

Perhaps they only crumble if the paper is written on--to hide what is written from the casual observer?

Perhaps the crumbling has something to do with making sure the the paper is permanently trash--Nobody will take it out of the trash basket and try to use it once it is crumbled. i.e. the frustrated author crumbling up a rough draft that will not be used or bookkeeper whose numbers didnt balance and has to try again.
