when i say coat i mean to add before cooking not afterwards thanks x

Get some paprika, chinese 5 spice, ginger and mix it in a little olive oil and soy sauce. Marinade the chicken in if for about 2 hours then cook in the oven. MMM yummy

Here's a recipe:
Oven Fried Chicken


1 1/3 cups rice-corn crispy cereal, (recommended: Crispex)
2 1/4 cups broken bagel chips or melba toast
1 tablespoon canola oil
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon freshly ground black pepper
1/2 cup light mayonnaise
1 teaspoon Dijon mustard
4 bone-in, skinless chicken pieces (about 6 ounces each) See Cook's Note

Preheat the oven to 400 degrees F. Set a rack on a foil lined baking sheet. Spray the rack generously with cooking spray.
Finely grind the cereal and toasts together in a food processor. Transfer crumbs to a large gallon size plastic bag. Add the oil, salt, cayenne, paprika, and ground pepper and toss to mix thoroughly. Whisk the light mayonnaise and Dijon mustard together in a medium shallow bowl. Add chicken to mayonnaise and turn to coat all the pieces evenly. Drop the chicken into the plastic bag, seal and shake until each piece is evenly coated. Place coated pieces on the prepared rack. Spray the chicken pieces evenly with cooking spray, and bake until the coating crisps and browns and an instant-read thermometer inserted in the thickest part of the pieces registers 160 degrees F, 35 to 40 minutes.
Transfer to a platter and serve hot or at room temperature

Schwartz do a lovely chicken seasoning that tastes gorgeous and also makes it a lovely rich colour. You'll find it with the dried spices in any supermarket. This is also good to use when cooking chicken breast. I would be lost without it!

Also, have you tried massaging the skin with olive oil, sea salt, black peppper and garlic then slitting the skin slightly with a knife, stuffing them sprigs of fresh rosemary (or if that is not to your tastes, try thyme) before cooking. Your chicken will be full of flavour and look very nice!

Also you can try doing something a little different with the garlic ... instead of chopping or crushing it and putting on the chicken, try roasting them whole in their pink skins with the bird or your potatoes. They go all soft and gooey inside when done and to eat you can peel them or suck them out (the taste isn't as pungent when cooked). Hmm ... lovely! :o)

Last week I stumbled across a seasoning mix for fried(or baked) chicken. It is Sylvia's chicken coating. It is very good & easy. Tastes like KFC sort of but with a little cayenne kick. I bought it thinking it would have the southern fried chicken taste & it does. Really good.
I also had a friend recommend to fry chicken in Butter flavor Crisco. Thats great too for a change of pace.

Try this: break one egg and mix in a large bowl. Mix in 3 tablespoons of honey, Add salt and pepper to the mixture.
Using a 2 1/2 bag of chicken parts dip each part thoroughly in the mixture and coat each part with flour. Fry until crisp or bake until juice run clear at 350.

to roast a whole chicken:

++ gently rub outside with room temperature butter
++ put on some thyme in some form
(dry leaves, powdered leaves or fresh leaves)
++ black pepper & a small sprinkle of salt
++ inside the cavity which you leave empty: 2 bay leaves, and a sprig of thyme ..
(this recipe usually specifies some peeled garlic cloves to be put into the cavity ... so if you aren't *too* tired of garlic, it is nice .... originally, this recipe is classic French, according to
the late Craig Claiborne, author and food editor of The New York Times .... and is good served cold as picnic fare with a couple of salads and some crusty bread - but, I assure you, it is very good straight from the oven with some roasted potatoes)

you could also do:
++ rub outside with butter and sprinkle on some finely cut fresh rosemary ... and some fresh black pepper ... a little salt ....
++ inside the cavity -- a few sprigs of rosemary and..and a few coarsley cracked peppercorns ...some carrot sticks and pieces of potato cut like fries ...

How can you be bored of garlic?????? Oh well, you could coat it with paprika or the grill seasoning powder you can get in most supermarkets now. That is nice and spicy - yes it has garlic, but it is not the overwhelming sort.

I like to stuff the chicken with halved lemons and rub honey all over the chicken. Season well and roast. The lemons give it a nice taste and the honey gives it a really nice brown colour.

Tastes lovely. You can also add anything else you like

ah, there is so many things!!!!

when roasting just make few holes in a chicken with knife and push in some rosemary, dont forget to take it out before carving!
or just sprinkle it with season all or chicken seasoning, then it tastes very chikeny :)

for chicken breast sprinkle it with some chili flakes or some dries herbs like basil and thyme
or marinade with piri piri marinade, available in all supermarkets
or just keep it simple, just add some salt and once cooked sprinkle with some Newman's own balsamic vinegar dressing, heaven!!!

Mix some smoked paprika with worcestershire sauce and olive oil and coat the chicken with it and bake in the oven
