They design electronic circuitry, keep track of projects, schedules, budgets, product modifications and changes, and solve manufacturing and production problems.
But, quite frankly, the way engineering jobs are being shipped offshore I don't see engineering as being much of a career path anymore.
Go for a degree in business management or accounting. Or do a Law degree.

What is not done by electrical and Electronics Engineer? In every step of life, there is a high need of electronics engineer.
Communication i.e. radio, TV, telephone, mobile ; Computer i.e. making different hardware, networking, internet setting, making interfacing device; And the basic electronics: to research on the electrical properties of molecules, solid state devices, VLSI design.
Main work is to research and design a system with electrical and electronic circuit.

Lots of different things. I mostly work with power systems. i design and refine power systems. But I'm actually a Electrical/Environmental/Materials Engineer. I work with solar cells and photovoltaic cells trying to increase their efficiency in order to make them a viable energy source. Much of my work consists of explaining to laymen why the project they want me to design isn't possible. :)
Electronics Engineers (we're different) design control systems, communications systems, etc. Be prepared to do a lot of computing. You'll even learn a little programming.
It's a good career field to get into. Potential jobs are very numerous, and the pay is a lot better with a B.S. than most other jobs.

Electronic engineers design electronics circuits and systems and modules within those systems. For example, aircraft, spacecraft, aerospace ground systems, automobile electronics, computers, control systems, weapons systems, etc. BUT, engineering of all types involves other important support activities that are part of any design project For example, scheduling work, predicting manpower requirements, providing cost estimates for proposal effort, participating in generation of proposals for acquisition of new contracts. They meet with customers or potential customers, make new business presentations to potential customers. You get the idea. Engineers do more than design work. They have to be involved in marketing, managing and other business activities. Very few do full-time or close to full-time design work unless it's with a very small company.
