You should not be doing more than 3 sets of 15. Though I wouldn't add to the weight anymore than that either. If you feel your obliques aren't being defined enough why don't you add something different to your workout?

The obliques are also worked while doing back exercises--lat pulldown, military press.

Do you do your crunches to the side as well? Stretch with weight over your head (reach left arm up and as far to the right as possible?)

What else are you doing for your ab workout? Hows your cardio?

Some side to side movement like boxing is great for those core muscles.

I'd consult with a trainer to achieve your desired effects. The obliques are so supported with the back muscles that you aren't going to feel post-workout pain like you do in your other muscles. But you don't want to even get the slightest muscle tear in them either. I dont know that I'd take the advice from Y!A when you are talking about 40 lbs, you don't want to accidentally injure yourself.
