Just compliment what is unique about her, what makes her stand out, what you like about her. (of course, use manners and discretion).

Pay attention. Does she have a new hair style? Compliment her on it. Is she wearing something that looks new or shows a particular sense of style (clothes, shoes, jewelry, etc.)? It's intentional, so notice it and say something nice about it. Does she have a nice smile or a nice laugh or nice eyes?- there you go. Is she particularly good at something - dancing, sports, singing...compliment that too.
Most important of all, be sincere and be honest.

First off, be honest. If you think she's beautiful, say "You're beautiful." If you think she's intelligent, say "You're the smartest girl I know." Also, compliment her hair. Her jeans. Her eyes. If you can write a poem or little phrase about her, write one. Either give the poem to her in a note, or recite it to her. You can make it funny, or pretty (one or the other, not both!). She'll think that's really sweet, because you wrote it for her. I hope this helps, and that you two are together for a long time!

My 14 year old daughter says either "your really beautiful" or "you have nice eyes" are both nice to hear.

Just tell her she looks pretty/gorgeous/beautiful (don't say 'Hot', for the love of God...), but only tell her that if you really mean it...
Compliment her hair, tell her she has pretty eyes, nose, whatever.
Tell her she's smart! :) and hopefully mean that one, too!
